Research interest

My research interests are in the biochemistry of food, especially the mechanisms that influence the digestion of food matrices and the release of nutrients. I am also interested in new methods of fractionation of food compounds, in the creation of new structures and in the study of food compounds that can influence the survival of probiotic lactic acid bacteria, intestinal inflammation and the microbiota-brain axis. .
