Intérêts de recherche

Les travaux de Dr. Doyen visent à étudier l'impact des procédés à hautes pressions hydrostatiques sur les propriétés physico-chimiques des matrices protéiques et peptidiques d’origine alimentaire dans l'optique d'optimiser leur fractionnement et leur concentration par les technologies de séparation baromembranaires. Ces recherches s’inscrivent donc dans une perspective d’amélioration de la performance et d’éco-efficience des procédés de transformation alimentaire.

Découvertes et identification de fractions peptidiques bioactives. Mise en évidence d’activités anticancer, antimicrobienne, antidiabète et antihypertensive de fractions peptidiques d’origine marine et végétale après le fractionnement des hydrolysats par un procédé électromembranaire.
Élaboration d’un réacteur membranaire pour la récupération de fractions bioactives. Mise au point  d’une technologie électromembranaire permettant de réaliser simultanément et en une seule étape l'hydrolyse enzymatique de la ?-lactoglobuline par la trypsine et le fractionnement des peptides anioniques et cationiques générés. La technologie s’est avérée très prometteuse en termes de taux de migration et de sélectivité peptidique.
