Meeting the challenge of sustainability in the dairy sector

Do not miss this scientific event with renowned speakers and the most recent research results regarding sustainability highligted, such as ecoefficient dairy processing technologies, optimization of dairy industry coproducts, alternative to antibiotics and preservatives, new findings on health benefits of milk and dairy products, clean label, food fraud in dairy, etc.

Speakers will go to the heart of concerns and challenges for the whole dairy production network by giving their vision of the global situation and specifically that of Canada and Quebec. Also, scientists will highlight research results that meet sustainability challenges 

In exclusivity, the artisan cheesemakers, members of the Centre d’expertise fromagère du Québec (CEFQ), will organize a half-day workshop, to which STELA Symposium attendees are invited, on the standardization of cheese-making terminology to describe taste, smell and texture (organoleptic descriptors).
