The 2019 edition of the STELA Symposium addresses the Challenge of Sustainability in the Dairy Sector.
How can the the industry meet the challenges and grasp the opportunities?
Speakers will go to the heart of concerns and issues for the dairy sector by introducing the global situation and giving their vision of the global situation and that of Canada and Quebec. Research results will also be highlighted by scientists regarding ecoefficient processes, optimization of dairy industry coproducts, health issues concerning dairy products consumption, alternatives to the use of antibiotics and dairy food fraud.
We are happy to welcome this year the artisan cheesemakers, members of the Centre d'expertise fromagère du Québec (CEFQ), to assist to the symposium's session on the topic of cheese. And the STELA symposium attendees are invited to participate to their half-day workshop on the standardization of cheesemaking terminology to describe taste, smell and texture (organoleptic descriptors).
Come meet graduat students as well! The future high qualified personnel will propose scientific posters and oral présentations of their most recent research results.
