The STELA Dairy Research Centre is part of the Institute of Nutrition and Functional Foods (INAF) as the dairy interest group. Researchers stand out by their expertise not only in food science and technology, but also in dairy production, microbiology, process engineering, nutrition, physico-chemistry and even medicine. The research themes are broad and diverse, ranging from cow feed, to the metagenomics of cheeses, the microflora of local milks, the eco-efficient processing processes, the bioactive compounds of milk, the functionality of lactic bacteria, the impact of dairy trans fats on cardiovascular health and many other cutting-edge themes.
