Dr. Champagne's research interests focus on:

  • Production and preservation of lactic cultures and probiotics: growing medium choice, drying and microencapsulation
  • Use of lactic cultures and probiotic in food: vegetable and milk fermentation; addition in non fermented foods (microencapsulation, cell adaptation during storage, viability in a simulated gastro-intestinal system)
